Kheer Rice Pudding

One of my all-time favorites for a winter morning…or summer morning…or any morning. The creamy texture and spiced coconut flavor get me every time!

Ingredients:

  • 2 cups Coconut Milk
  • 2 cups Milk
  • 3 Tbsp. Raw Sugar
  • 1/2 Cup Basmati or Jasmati Rice
  • 1/4 Almonds, sliced
  • 1/2 Tsp. Rose Water
  • 1/2 Tsp. Cardamom, ground
  • Mint Sprig, to garnish

Recipe: 25 minutes, 4 Servings

  1. In a medium-sized saucepan, bring the Cocount Milk, Raw Sugar and Milk to a boil. Add rice and reduce to a simmer on low heat for 20 minutes, allowing mixture to thicken.
  2. Add ground cardamom and rose water, stirring gently.
  3. When ready to serve, pour into bowls, sprinkle with almonds and top with a sprig of fresh mint.
