One of my all-time favorites for a winter morning…or summer morning…or any morning. The creamy texture and spiced coconut flavor get me every time!
Ingredients:
- 2 cups Coconut Milk
- 2 cups Milk
- 3 Tbsp. Raw Sugar
- 1/2 Cup Basmati or Jasmati Rice
- 1/4 Almonds, sliced
- 1/2 Tsp. Rose Water
- 1/2 Tsp. Cardamom, ground
- Mint Sprig, to garnish
Recipe: 25 minutes, 4 Servings
- In a medium-sized saucepan, bring the Cocount Milk, Raw Sugar and Milk to a boil. Add rice and reduce to a simmer on low heat for 20 minutes, allowing mixture to thicken.
- Add ground cardamom and rose water, stirring gently.
- When ready to serve, pour into bowls, sprinkle with almonds and top with a sprig of fresh mint.
